Can a Next Level Chef Mentor Cook Better Chicken Wings than Gordon Ramsay? (Ft Tini Younger)

Neutral oil, for frying
1 pound chicken drumsticks
Kosher salt
Freshly ground black pepper Dredge
½ cup all purpose flour
½ cup rice flour
2 tablespoons cornstarch
Freshly ground black pepper
Kosher salt Lemon Pepper Sauce
½ cup unsalted butter
2 tablespoons garlic paste
2 tablespoons lemon curd
2 tablespoons white soy sauce
1 tablespoon hot sauce
Kosher salt
1 teaspoon liquid seasoning Freshly ground black pepper Garnish
Scallions, sliced
Sesame seeds
Parsley, chopped
Lemon wedges PROCEDURE 1. Heat your oil to 350℉.
2. Prep your chicken: Use a paring knife to scrape the skin of the chicken from the tip of the bone down to the flesh, exposing the bone completely. 3. Season the chicken wings with salt and pepper.
4. Make the dredge: In a large mixing bowl, whisk together the all purpose flour, rice flour, cornstarch, black pepper and salt. 5. Toss the wings in the dredge to coat completely. Shake off any excess dredge and place the wings into the hot oil and fry until golden brown and the internal temperature of the chicken reaches 165℉, about 5 minutes. Remove the wings to a wire rack and season with salt. 6. Make the sauce: In a large skillet, combine half the butter, garlic paste, lemon curd, soy sauce and hot sauce. Bring the mixture to a simmer and season with salt, liquid seasoning and plenty of black pepper. Remove the sauce from the heat and stir in the remaining butter until it melts completely.
7. Toss the wings in the sauce and sprinkle with sliced scallions, sesame seeds and chopped parsley. Serve with lemon wedges. The home of Gordon Ramsay on YouTube.
